Five years later, but I found a clip of Kevin Pollak talking about this very thing. Apparently it was to let everyone know that the character was also an anti-semite. Not the best way of doing it, I think, but then again I've never seen the movie:

Any chance that this was just a missed edit? Maybe there was dialogue between the two characters at some point in the movie and it just ended up on the cutting room floor. Nicholsons rant In court was so solid I can’t imagine that they would do a retake just to remove the Weinberg comment. Maybe?
